To make delicious barbecue ribs, follow this simple step-by-step recipe that guarantees flavor and tenderness. 

Start by prepping your ribs. Choose between baby back ribs or spare ribs, depending on your preference. Once you’ve selected your ribs, remove the silver skin from the bone side. This tougher membrane can hinder flavor absorption and tenderness.

Next, mix your dry rub. Combine brown sugar, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and salt in a bowl. Adjust the seasoning levels to your taste. Generously coat your ribs with the rub, covering both sides. Let them sit for at least 30 minutes, or better yet, wrap them in plastic and refrigerate overnight for maximum flavor.

Preheat your grill or oven. If grilling, prepare for indirect heat by placing the coals on one side or only turning on one set of burners. For the oven, set it to 275°F (135°C). While heating, make your barbecue sauce; you can use store-bought or homemade. If you’re making your own, combine ketchup, apple cider vinegar, honey, Worcestershire sauce, garlic powder, and a pinch of salt in a saucepan. Simmer for 15-20 minutes until it thickens slightly.

Once your grill/oven is ready, place the ribs bone-side down. If using a grill, close the lid and let them cook indirectly for 2.5 to 3 hours. If you’re using an oven, place a rack in the middle and cook for 2.5 to 3 hours, covered with foil for the first half to maintain moisture.

After cooking, check for tenderness. The meat should be pulling away from the bones but not completely falling off. Once satisfied, remove the ribs from heat.

Now it’s time to glaze! Brush your barbecue sauce over the ribs, then return them to the grill or oven for about 15-20 minutes to caramelize the sauce. This step adds that beautiful stickiness and flavor.

Once your ribs are done, remove them from the grill/oven and let them rest for about 10 minutes. This resting period allows juices to redistribute, ensuring juicy meat.
